As 2015 comes to a close, I thought that it was very important for me to reflect on the progress that my blog has made. When I first started PinchMeTwice, I was using this blog as a way to push myself to cook at home more, as well as monitor the progression of my baking and cooking skills.

Prior to starting this blog, I would eat out way more than I should, and I packed on the pounds as a result. 3 months after this blog began I started my journey to lose weight. And although many of the recipes I post are not exactly healthy, cooking at home has allowed me to monitor my food intake better, as well as lose almost 40lbs this year. I would encourage anyone to make the effort to prepare their food at home instead of getting take-out, because it is well worth it.

Ultimate Peanut Butter Cookies

One of the first things I’ve ever baked as a child was peanut butter cookies. Back then I didn’t have a clue about baking. I just so happened to come across a simple recipe and I decided to give it a try. I was about 8 years old and so I don’t remember much, but I know that somehow the cookies I made came out super moist and decadent.

This year I decided to participate in the 5th annual Food Blogger Cookie Swap. After making a donation to the Cookies For Kids foundation you are assigned 3 other bloggers to send cookies to. Reminiscing back on my childhood, I chose to make these Ultimate Peanut Butter Cookies.

Checking Out Houston, TX – A Review of Different Food Spots

This past weekend, my best friend Nikki and I went on a trip to Houston, TX. Our motivation for visiting was mainly to check out the vibe of the city, as we both are considering relocating to this area. We were able to dine at a few eateries, and everything we had exceeded our expectations.

I was starving after being an hour behind schedule due to a delayed flight. Nikki was already there because we took separate flights, and had already secured the rental car. So in my hunger I immediately wanted to go to Frenchy’s Chicken.
